Kale Caesar

QUANTITY AND INGREDIENTS
6 tablespoons mayonnaise (olive oil-based)
1/4 cup Dijon mustard
1/4 cup grated parmesan cheese, more for garnish
2 teaspoons Worcestershire
4 teaspoons minced garlic
4 squeezes of anchovy paste
1/8 tsp Sriracha hot chili sauce
3 tablespoons fresh lemon juice and lemon zest from 1/2 lemon
6 tablespoons olive oil
salt and freshly ground pepper to taste
2 bunches dinosaur kale, ribs removed, and hand cut into bite-size pieces

1. Read and reread the recipe.
2. Gather all your ingredients and necessary equipment.
PREPARE THE DRESSING
1. Add all the ingredients for the dressing to the blender, except the olive oil, and blend until smooth.
2. Gradually add the olive oil. It is important to slowly add the oil to create an emulsion. Season with salt and freshly ground pepper.
3. Dress your salad greens, “massaging” the kale. Top with additional shaved Parmesan cheese.
There is plenty of dressing for future meals and it will store well for several days.
CULINARY TIPS
1. Massaging kale makes it more tender and palatable, reduces bitterness, improves digestion, and releases nutrients from the leaves.
2. An emulsion is a suspension of oil droplets in water, creating a smooth, stable mixture that won't separate, "trapping" the oil within the water phase. To create an emulsion, gradual add oil to the vinegar (or other water based liquid) while stirring vigorously. Dijon mustard, egg yolks, mayonnaise, honey, and even some types of pureed vegetables like tomato paste can act as emulsifiers.
